The Tunisian market for vermouth and flavoured wines expanded in 2019, with production rising by over 10% to 5.7 million liters. This growth was driven by the entry of new international players, such as importers facilitating Tunisian wine exports to the United States, coupled with improved viticultural techniques and vineyard restructuring that enhanced product quality and Mediterranean typicity. Favorable climatic conditions in northeastern Tunisia further supported the increase in output.

Market volume stabilized in 2020 with a minor decline, while ongoing development of the aromatic and medicinal plants sector in Tunisia laid groundwork for future flavoured wine production through increased availability of local botanicals. However, 2021 saw a sharp contraction of nearly 10%, reducing the market to around 5.0 million liters.

A strong recovery followed in 2022, with market volume jumping 18% to 5.9 million liters, supported by a growing emphasis on sanitary and environmental quality standards for aromatic plant raw materials, which bolstered confidence in locally sourced ingredients. Rising prices for certain agricultural products increased production costs. By 2023, volumes eased slightly by 3%, settling at 5.8 million liters.
