From 2018 to 2019, the vegetable puree market volume in Ukraine grew from 962 t to 990 t, supported by a dynamic and unsaturated processed vegetable sector. High demand for products like homogenized canned and frozen items exceeded domestic supply, stimulating imports, while around 20 enterprises were actively engaged in shock-freezing operations. After a slight contraction to 955 t in 2020, the market recovered to 985 t in 2021; during this period, industry emphasis was placed on needed investments in product quality, safety, and production capacity to boost sales in the canned fruit and vegetable segment.

The market entered a phase of sharp contraction from 2022, with volume falling to 761 t in 2022 and further to 697 t in 2023. Imports dropped significantly over these years, reflecting major shifts in supply conditions. By 2024, industry attention turned toward export opportunities, with revenue from canned non-frozen vegetable exports rising by 33% and frozen vegetable sales nearly doubling, even as imports continued to decline. The domestic market for long-shelf-life foods, including vegetable preserves, remained substantial, underpinned by a strong home-canning tradition and competition based on low-cost quality production.
