The market volume for prepared mushrooms and truffles in Ukraine increased from 809 t in 2018 to 1 353 t in 2020. State regulation of the fruit and vegetable processing sector provided a framework for production activities, while broader trends in vegetable preservation, including government oversight and production changes, supported this expansion.

Market volume then fell to 1 257 t in 2021 and dropped sharply to 740 t in 2022. During this period, the industry held the Ukrainian Mushroom Days event to foster producer networking and technology exchange. In 2023, the market rebounded to 975 t. Ukraine's production of prepared mushrooms and truffles increased for the second consecutive year. In 2020, the country produced 1 025 tonnes, marking a significant 20.8% rise compared to 2019. Over the 2017-2020 period, production grew by 27.7%, with an average annual growth rate of 8.5%. The lowest production level was recorded in 2018 at 656 tonnes, which represented an 18.2% decline from the previous year. The largest increase occurred in 2019, with production surging by 29.3%.

Ukraine's exports of prepared mushrooms and truffles declined for the third consecutive year. In 2020, the country exported 43.8 tonnes, a 28.9% drop from the previous year. Between 2017 and 2020, exports decreased by 53%, equivalent to an average annual decline of 22.3%.

From 2017 to 2020, Germany, Kazakhstan, and Belarus were the main destinations for Ukraine's prepared mushrooms and truffles exports by volume. Germany accounted for 29.9% of exports, Kazakhstan for 18.8%, and Belarus for 16.5%. Together, these three countries absorbed 65.1% of Ukraine's total exports in this category.

After a two-year decline, Ukraine's prepared mushrooms and truffles exports increased in value. In 2020, exports reached 99.8 thousand US dollars, an 11.4% rise from the previous year. Over the 2017-2020 period, however, export value decreased by 37.4%, with an average annual decline of 14.5%. The lowest value was recorded in 2019 at 89.6 thousand US dollars, following the largest decline of 31.8% in 2018.

From 2017 to 2020, Germany, Kazakhstan, and Belarus remained the leading destinations for Ukraine's prepared mushrooms and truffles exports by value. Germany accounted for 24.2% of export value, Kazakhstan for 17.1%, and Belarus for 14.7%. Together, these three countries represented 56.0% of Ukraine's total export flows in this category.

The lowest import volume was recorded in 2018 at 236.5 tonnes, which represented an 11.9% decline from the previous year. The largest increase occurred in 2019, with imports rising by 38.8%.

From 2017 to 2020, China and Poland dominated Ukraine's imports of prepared mushrooms and truffles by volume, together capturing 82.9% of total imports. The remaining imports were distributed across various other markets.

The lowest value was recorded in 2018 at 285.9 thousand US dollars, following a 26.3% decline that year.
