Between 2018 and 2020, the market for vegetables, pulses and potatoes preserved in vinegar in Ukraine was influenced by a lasting consumer shift toward fresh and frozen produce, driven by health and wellness trends, which reduced demand for traditional vinegar-based preserves. This shift was compounded in 2020 by the COVID-19 pandemic, which disrupted sales through food-service channels and contributed to a market decline to 31 866 tonnes, despite some support from continued interest in healthy eating. The market had previously grown to 33 448 tonnes in 2019, supported by increased domestic production.

In 2021, market volume recovered to 33 539 tonnes as producers invested in attractive packaging and marketing to stimulate demand amid challenging economic conditions. The following year, however, the market contracted sharply to 29 051 tonnes due to a combination of excess vegetable supplies, low consumer demand, and a persistent preference for fresh salads and vegetables.

By 2023, the market rebounded to 32 966 tonnes, approaching the level seen in 2021, though no specific industry drivers were reported for that year.
