Earlier Report Observations

Between 2018 and 2023, the Northern European market for vegetables, pulses and potatoes in vinegar saw its volume gradually decline from 192.4 thousand tons to 181.7 thousand tons. The drop was most pronounced in 2020, when volume fell by 3.1%, and continued at a slower pace through 2022.

By 2023, the market stabilized at just under 182 thousand tons. This coincided with reports of a multi-year decrease in fresh vegetable and potato consumption across the region, which likely reduced demand for preserved versions. At the same time, health authorities were promoting higher intake of pulses, a key component of these products, which may have helped offset a steeper decline.

Heading into 2024, industry sources highlighted sharp price increases for potatoes and vegetables, which could affect production costs and consumer prices. Consumer trends also showed growing interest in plant-based and sustainably produced foods, including legumes, suggesting a shift in demand within the category.
