The market for fresh, chilled or frozen sheep and goat meat in Senegal grew from 112.2 thousand tons in 2018 to 132.9 thousand tons in 2023, with domestic production driving most of the volume. The market expansion in 2022 was notably supported by a rise in domestic livestock feed production, which enhanced the resources available for sheep and goat farming and contributed to the increase in meat output.

Consumer preferences in Senegal show a strong demand for red meat, with agricultural households holding an average of 12 sheep, underpinning steady consumption. Recent efforts to modernize the sector include the inauguration of new livestock markets in Fatick/Diouroup and Kaolack/Thiawando in 2024, which aim to strengthen market access and organization for herders.

In 2020, the country produced 114 137 tons of sheep and goat meat, representing a 9.0% increase compared to the previous year. In 2020, the output was valued at 1 022 million US dollars, marking a modest 4.2% increase over the previous year.
