From 2018, potato overproduction in Colombia encouraged diversification into processed products like potato flour, supporting initial production growth to 7 585 t in 2019. However, the introduction of stricter quality standards for potatoes destined for processing in 2020 led to a 16% contraction, lowering output to 6 368 t.

Production rebounded to 7 709 t in 2021 before a temporary drop to 6 131 t in 2022. A significant 24% recovery followed in 2023, reaching 7 617 t, coinciding with Fedepapa's push for certified seeds and exploration of new export markets, including Venezuela. Concurrent industry initiatives promoted the development of new product applications, such as baked goods and pasta incorporating potato flour.

By 2024, the market saw expanded industrial use of potato flour in paper and textile manufacturing, with a reported 20% increase in industrial consumption. New players entered the segment, and the opening of additional supermarket outlets broadened distribution, although supply chain challenges and price volatility persisted.
