The Ukrainian pork market volume remained stable at around 729 thousand tons in 2018 and 2019, before edging down to 722 thousand tons in 2020. During this period, leading producers and agricultural holdings began reorienting production to meet European standards, which required additional financial resources for smaller producers to access the EU market.

Market volume rebounded to 759 thousand tons in 2021 but then fell to 705 thousand tons in 2022. This decline coincided with pork price increases driven by inflation and shifts in consumer preferences, which dampened demand. Additionally, stringent legislative norms governing the storage and release of frozen meat, along with quality requirements for chilled and frozen products, were in effect.

The downward trend continued in 2023, with market volume dropping to 650 thousand tons. This was primarily due to reduced pork consumption stemming from a decrease in swine herd numbers, coupled with a lack of significant export growth. Imports of frozen and chilled pork also fell sharply, but this did not offset the contraction in domestic production.

In 2020, Ukraine produced 697.2 thousand tons of pork, marking a 1.6% decrease from the previous year. Over the 2017-2020 period, production fell by 5.3%, which translates to an average annual decline of 1.8%. The most significant drop occurred in 2018 at 4.5%, while 2019 saw a modest increase of 0.8%.

The value of pork output in Ukraine reached 1 517 million US dollars in 2020, down 8.2% from 2019. From 2017 to 2020, production value decreased by 3.5%, averaging a 1.2% annual decline. The lowest value was recorded in 2018 at 1 510 million US dollars, while 2019 saw the peak at 1 651 million US dollars with the largest annual increase of 9.4%.

Ukraine's pork exports grew for the second consecutive year in 2020, reaching 2 896 tons—a 28.2% year-over-year increase. However, over the 2017-2020 period, export volumes declined by 41.2%, averaging a 16.2% annual decrease. The lowest point was in 2018 at 1 756 tons, which saw the sharpest drop of 64.3%, while 2019 experienced the largest gain of 28.6%.

From 2017 to 2020, Hong Kong (33.2% of export volume), Georgia (27.0%), and the United Arab Emirates (19.2%) were the primary destinations for Ukrainian pork exports, collectively accounting for 79.3% of total export volume.

The value of pork exports from Ukraine rose for the second year in a row in 2020, reaching 6 299 thousand US dollars—a strong 19.7% increase from the previous year. Over the 2017-2020 period, export value fell by 40.1%, with a compound annual growth rate of -15.7%. The lowest value was recorded in 2018 at 3 774 thousand US dollars, which saw the largest decline of 64.1%, while 2019 posted the biggest increase of 39.5%.

During 2017-2020, Hong Kong (27.6% of export value), Georgia (27.4%), and the United Arab Emirates (23.6%) dominated Ukraine's pork export market in value terms, together representing 78.5% of total export flows.

The highest volume was recorded in 2018 at 28 562 tons, which saw the largest surge of 408.2%, while 2019 experienced the steepest decline of 18.8%.

The largest decline occurred in 2019 at 14.8%, while 2018 saw the most significant jump of 418.7%.
