Between 2018 and 2020, the market volume for salted, brined, dried or smoked pork in Ukraine grew from 6,827 t to 7,456 t. A rise in the industrial pig population in 2019 supported higher domestic production. The COVID-19 pandemic in 2020 introduced disruptions in feed supply chains and reduced demand from the food service sector, which moderated the market's growth that year.

The market expanded further to 8,138 t in 2021, even as producers faced increasing costs for energy and fuel. This trend reversed in 2022 when outbreaks of African swine fever (ASF) led to a reduction in pig herds, causing domestic production to fall and pulling the total market volume down to 7,184 t. During this period, the government also enacted measures to simplify access to public procurement financing for pork product manufacturers under martial law.

In 2023, the market volume saw a slight recovery to 7,335 t, bolstered by a significant rise in imports. Domestic production, however, continued to face headwinds, including the shutdown of the 'Artemsil' salt plant due to the war, which constrained the supply of salt and brine essential for processing. Additionally, new mandatory labeling requirements for meat products, specifying permitted ingredients and colorings, came into effect.

Ukraine produced 6 452 tonnes of salted, brined, dried, or smoked pork in 2020, marking a 3.7% year-on-year decrease. Production peaked in 2019 at 6 699 tonnes, which represented the largest annual increase of 3.4% during the period. Overall, from 2017 to 2020, production declined by 3.6%, with a compound annual growth rate of 1.2%.

After two years of growth, the production value of salted, brined, dried, or smoked pork in Ukraine fell in 2020. Output was valued at 31 412 thousand US dollars, down 3.8% from 2019. The highest value was recorded in 2019 at 32 659 thousand US dollars, following the largest increase of 25.5% in 2018. Over the 2017-2020 period, production value rose by 35.4%, with a compound annual growth rate of 10.6%.

Between 2017 and 2020, Georgia dominated Ukraine's exports of salted, brined, dried, or smoked pork in volume terms, accounting for 84.0% of total shipments. The remaining share was distributed among various smaller destinations.

Ukraine's exports of salted, brined, dried, or smoked pork in value terms fell for the third year in a row in 2020, amounting to 19 thousand US dollars, an 8.9% decrease from the previous year. Over the 2017-2020 period, export value declined by 31.6%, with a compound annual growth rate of 11.9%.
