From 2018, the Ukrainian pig offal market underwent a structural transformation as large-scale enterprises began consolidating their share, driven by the adoption of automation and modern technologies to counter resource and labor shortages. This shift, alongside the significant influence of state-owned companies on the pork sector, set the stage for the market. However, the onset of the COVID-19 pandemic in 2020 disrupted supply chains for feed and raised production costs, contributing to a contraction in the overall market volume to 41 171 t by that year.

The market rebounded in 2021, with volume growing to 44 629 t. This increase was primarily fueled by a sharp 23% rise in imports, which compensated for a domestic production shortfall. Government policy shifts, including the introduction of tax incentives for farmers on a simplified taxation system, provided additional support to the agricultural sector during this period.

Beginning in 2022, the full-scale war caused a severe market shock, leading to an estimated 10-12% reduction in pig herds and significant disruptions to logistics and labor supply. These factors, coupled with rising production costs, drove a sustained decline in market volume, which fell to 37 927 t by 2023. Despite ongoing challenges, the industry focused on further modernization, and new rules for product labeling and packaging were implemented to enhance quality control.

Pig offal exports from Ukraine increased for the second consecutive year. In 2020, Ukraine exported 6 838 tonnes, showing a strong increase of 10.9% compared to 2019.
