From 2018 to 2020, Uganda's pig offal production increased from 10 138 tons to 10 985 tons, while market volume grew from 10 139 tons to 10 985 tons. This gradual rise was underpinned by an expansion of the national pig herd from 4.1 million to 4.4 million head, driven by higher pork demand. During this period, farmers adopted better practices such as organic rearing, optimized feeding, and selective breeding, which improved yields. Moreover, processors began adding value by locally processing offal and other cuts, strengthening the supply chain.

The market witnessed a sharp turnaround in 2021 when production leaped by 57% to 17 211 tons and market volume reached 17 211 tons. After this surge, output stabilized at approximately 17 250 tons in 2022 and 2023, with market volume settling around 17 235 tons. Throughout the entire period, imports and exports played a negligible role, confirming that domestic production met virtually all local consumption.
