The market for fresh or chilled goose meat in Ukraine expanded from 8 514 t in 2018 to 9 823 t in 2020. This growth coincided with a general rise in poultry meat production, as leading processors reoriented operations toward European standards. Three major players consolidated their share of the poultry market in 2019, the same year exports of poultry meat increased by 17.5%. Although the COVID-19 pandemic began to reduce demand for traditional meats in 2020 over cross-contamination concerns, the goose meat market continued to grow as producers invested in new processing technologies to enhance quality and safety.

From 2021, the market contracted sharply, falling to 6 413 t in 2021 and to 5 101 t by 2023. Global logistics problems and volatile raw material prices hampered production and supply in 2021. The outbreak of war in Ukraine in 2022 severely disrupted supply chains, reduced domestic consumption, and limited export routes. During this period, regulatory requirements for food safety and product labeling were strengthened, while consumer preferences shifted noticeably toward higher-quality chilled meat.
