A sustained growth trend began in 2019, driven by new consumer habits and a shift toward more sustainable production systems, such as barn or free-range eggs, which tripled their value share.

From 2022, eggs became the only staple food to grow in consumption volume in Spain, gaining market share despite overall household spending contraction and rising prices. Production increased 2.2% in 2023, while household consumption volume rose 7.7% and sector revenue jumped 30%. In 2024, consumption reached record levels even as prices climbed, with avian influenza outbreaks in Spain and Europe tightening supply.

Structural changes within the sector included a steady move away from caged systems, while consumption occasions diversified—breakfast consumption outside the home grew 17% in 2023. The market's volume expansion of 16.7% between 2019 and 2024 underscored eggs' resilience as a staple food.

The highest value was recorded in 2018 at 247.9 million US dollars, which also saw the largest increase of 16.3%.
