The market volume for not in shell eggs and egg yolks in Northern Europe declined from 132 тыс. т in 2018 to a low of 90 тыс. т in 2020, before recovering steadily to reach 123 тыс. т by 2023. In value terms, the market followed a similar pattern, falling from $427.9 million to $279.3 million in 2020 and then expanding sharply to $619.7 million in 2023.

The strong value growth in 2023 was partly driven by a substantial rise in consumer egg prices, which increased by 31% in Sweden between February 2022 and February 2023. Simultaneously, disease outbreaks such as avian influenza and salmonella affected egg production and imports, creating supply-side pressures that contributed to market volatility and supported higher price levels.

In 2024, import and export volumes continued to rise, reaching 92.7 тыс. т and 43.9 тыс. т respectively. Consumer purchasing power grew by 2.3% during the year, supporting demand, while retail groups invested in digitalization and sustainability initiatives, responding to the growing preference for organic and eco-friendly products in the region.

Northern Europe's production of not-in-shell eggs and egg yolks has declined for the second year in a row. In 2020, the region produced 47 624 tonnes, marking a sharp 40.4% drop from the previous year. Looking at the 2017-2020 period, overall production fell by 38.7%, with an average annual decline of 15.1%. The peak was in 2018 at 83 477 tonnes, which also saw the largest annual increase of 7.4%.

The data shows irregular fluctuations, pointing to a volatile market environment. Export volumes varied by a factor of two, from the low in 2017 to the high in 2018. In 2020, Northern Europe exported 32 957 tonnes of not-in-shell eggs and egg yolks, a significant 16.0% decrease from the year before. The highest volume was recorded in 2018 at 39 538 tonnes, which also experienced the largest surge of 96.4%.

From 2017 to 2020, the country structure of exports in kind was highly diversified. France accounted for 16.3% of exports, the Netherlands for 12.6%, and Germany for 6.5%, together making up just 35.4% of total flows. The remaining 64.6% came from a long tail of smaller markets.

In 2020, exports reached 65.9 million US dollars, a substantial 12.8% drop year-over-year. Over the 2017-2020 period, exports grew by 14.7%, equivalent to an annualized rate of 4.7%. The peak was in 2018 at 76.9 million US dollars, which also saw the largest increase of 33.9%.
