From 2018 to 2020, the Brazilian market for not in shell eggs and egg yolks grew from 106.8 thousand tonnes to 115.3 thousand tonnes. This increase was driven by rising per capita consumption, which reached 192 eggs in 2018 and climbed to the global average of 230 eggs by 2019, as eggs became a more attractive protein alternative amid higher meat prices. Brazil's privileged sanitary status, free from Avian Influenza, bolstered both domestic confidence and exports, which surged by 81.5% in 2020.

Market volume stabilized around 115.3-115.7 thousand tonnes in 2021 and 2022. Production growth was offset by expanding exports, which were 47% higher in 2021 than in 2019, facilitated by investments in processing plants for liquid, powdered, and cooked egg products. Elevated production costs due to high corn and soybean meal prices constrained supply expansion, while demand remained firm. During this period, innovation entered the market with the global launch of the first plant-based boiled egg.

In 2023, the market volume edged down to 114.2 thousand tonnes as record exports, which jumped by 168%, absorbed much of the increased production. Domestic per capita consumption remained high at 242 eggs. The market continued to consolidate through strategic acquisitions, such as JBS's purchase of a 50% stake in Mantiqueira Brasil, and maintained its disease-free status to support international trade confidence.

In 2021, exports amounted to 7 782 K $ US, representing a steep advance of 45.6% compared to the previous year.
