Turkish honey production increased from 107.9 thousand tons in 2018 to 109.3 thousand tons in 2019, while the market volume grew from 101.5 to 103.8 thousand tons. This initial growth was supported by state subsidies for beekeeping, including support for family businesses in regions like Ayaş in Ankara, alongside rising consumer demand for organic and local honey varieties.

Production then entered a two-year decline, falling to 104.1 thousand tons in 2020 and 96.3 thousand tons in 2021. The domestic market volume contracted more sharply to 86.4 thousand tons in 2021 as export volumes remained steady.

A sharp recovery followed in 2022, with production jumping to 118.3 thousand tons and market volume rebounding to 101.1 thousand tons. By 2023, despite a slight dip in output to 114.9 thousand tons, domestic consumption continued to expand to 105.5 thousand tons, partly due to producer pricing strategies where high-yield beekeepers set lower prices, stimulating local demand. In 2024, drought and bee colony losses reported in the sector constrained supply, contributing to a decline in exports to 8.7 thousand tons.

From 2017 to 2020, Germany, the United States, and Saudi Arabia were the main markets for Turkey's honey exports in volume terms, accounting for 38.2%, 27.0%, and 7.1% of exports, respectively. Together, they represented 72.3% of total export flows.
