The Ukrainian frozen vegetable market volume expanded from 23 000 tonnes in 2018 to 32 000 tonnes in 2021. During this period, the wholesale vegetable supply market was still forming, with a noted shortage of fresh vegetables but a surplus of frozen ones, which may have supported frozen product consumption.

In 2022, the market dropped sharply to 23 000 tonnes as the occupation of key vegetable-growing regions in Kherson and Zaporizhzhia oblasts led to the loss of about one-third of production capacity. Rising costs for energy, transport, and utilities, compounded by war-related disruptions, constrained supply, even though demand for frozen vegetables increased due to their longer shelf life and economic appeal.

By 2023, the market rebounded to 37 000 tonnes, exceeding pre-war levels. This recovery was driven by the reconstruction and modernization of processing facilities, such as the Euroika agro-firm's plant in Odesa region, which boosted production capacity. Lower prices for most borscht-set vegetables also likely stimulated consumer demand.

After two years of growth, Ukraine's frozen vegetable exports declined. In 2020, the country exported 6 262 tonnes, down 27.8% from 2019.
