Earlier Report Observations

The market for not further prepared dried vegetables in Ukraine expanded significantly from 2 888 т in 2018 to 3 714 т in 2019, driven by strengthening domestic production and a developed raw material base. The segment of dried onions, including flakes and powder, showed dynamic growth, and the variety of cuts such as cubes, strips, slices, and powders catered to diverse consumer needs. In 2020, market volume stabilized at 3 608 т as the passage of the land market law improved access to agricultural land, potentially boosting vegetable supply for processing, while global demand for deeply processed fruits and vegetables provided additional stimulus.

In 2021, market volume decreased to 3 090 т while domestic production continued to grow, supported by the adoption of new production technologies such as automated microclimate systems and the rising segment of dried onion powder. The following year, the outbreak of regional conflict introduced severe logistical and supply challenges, disrupting both imports and exports, which led to a further contraction of the market to 2 897 т. Concurrently, changing consumer preferences toward convenient and long‑shelf‑life products supported underlying demand.

By 2023, the market recovered to 3 283 т, bolstered by the strengthened position of Ukrainian manufacturers and an expanded product assortment including various cuts and powders. Although specific legislative changes were not reported, the industry continued to evolve amid high per‑capita vegetable consumption and climate‑induced factors such as droughts, which affected raw material costs and availability in 2024.
