Factors in 2024 indicated continued sector evolution, with rising retail prices for dried white mushrooms due to favorable harvesting conditions and the establishment of new production facilities for shiitake mushrooms. Producers also began adapting to European packaging standards, reflecting ongoing efforts to align with export market requirements.

Ukraine's dried mushroom production grew for the second consecutive year. In 2020, the country produced 210.2 t of dried mushrooms, a 20.8% increase from 2019. Over the 2017-2020 period, production rose by 27.7%, with an average annual growth rate of 8.5%. The lowest production was recorded in 2018 at 134.6 t, marking the largest decline of 18.2%. In contrast, 2019 saw the largest increase of 29.3%.

Ukraine's dried mushroom production value increased for the second year in a row. In 2020, output was valued at 2 893 K $ US, up 35.1% from the previous year. Between 2017 and 2020, production value grew by 38.1%, equivalent to an annualized rate of 11.4%. The lowest value occurred in 2018 at 1 683 K $ US, which also saw the largest decline of 19.7%.

The market showed an unstable trend over this period. Exports reached their lowest point in 2019 at 12 938 kg and peaked in 2018 at 46 342 kg, with a 3.6-fold difference between these years. In 2020, dried mushroom shipments from Ukraine totaled 15 637 kg, a strong increase of 20.9% compared to 2019. The largest decline was recorded in 2019 at 72.1%, while the largest increase occurred in 2018 at 104.4%.
