The market for chicory roots in Ukraine gradually contracted from 2018 to 2021, with annual production decreasing from approximately 6.3 thousand tons to just over 6.0 thousand tons. This decline was primarily driven by the supply chain disruptions caused by the COVID-19 pandemic in 2020, which affected vegetable processing sectors, followed by persistent logistical difficulties in sourcing fresh vegetables for drying in 2021.

Market volume stabilized and began a modest recovery in 2022 and 2023, reaching about 6.1 thousand tons. The full-scale invasion in 2022 severely impacted agricultural production and led to the occupation of key growing regions. However, this was counterbalanced by a significant rise in consumer demand for frozen and shelf-stable food products, including chicory, due to their economic and storage advantages. Furthermore, a continued trend toward healthy eating and products containing prebiotics like inulin provided underlying support for chicory consumption during this period.

Chicory production in Ukraine fell for the second year in a row. In 2020, Ukraine produced 6 164 tonnes of chicory, a slight decrease of 1.5% from 2019. Over the 2017-2020 period, production grew by 6.2%, with an average annual growth rate of 2.0%. The peak was in 2018 at 6 348 tonnes, which also saw the largest increase of 9.4%.

Following two years of growth, chicory exports from Ukraine dropped. In 2020, Ukraine exported 1 000 kilograms of chicory, down 16.7% from the previous year. Between 2017 and 2020, exports surged by 100%, translating to an annualized growth rate of 26.0%. The highest volume was in 2019 at 1 200 kilograms, which also recorded the biggest jump of 62.2%.
