From 2018, the chicory market in Eastern Europe was buoyed by growing interest in healthy eating, which stimulated demand for chicory as a natural coffee substitute. This led to an expansion of production and sales, particularly in Russia. By 2019, increased sowing areas for root chicory and the entry of new producers supported industry development, although domestic market volume temporarily contracted due to rising export shipments. In 2020, sustained consumer trends towards healthy products, coupled with increased imports of dried chicory roots, drove market volume up to 6.3 thousand tons.

After a peak in 2020, market volume declined in 2021 and fell sharply to 3.0 thousand tons in 2022. This drop was primarily linked to a substantial increase in exports of Russian chicory, which diverted supply from the domestic market. Consumer demand for chicory continued to strengthen amid rising coffee prices, laying the groundwork for recovery. By 2023, the market rebounded to 4.4 thousand tons, supported by active development of soluble chicory production with new flavors and growing sales through online marketplaces and the health food segment.
