A recovery followed, with volume rising by 21% in 2021 and a further 5% in 2022 to reach 37 593 t, before declining again by 9% to 34 370 t in 2023.

In value terms, the market mirrored this volatility, increasing from 15 284 тыс. долл. in 2018 to a peak of 19 083 тыс. долл. in 2022. The most severe downturn occurred in 2020, when market value fell by 33% to 11 718 тыс. долл., before partially recovering to 16 513 тыс. долл. by 2023.

In 2021, Azerbaijan produced 34 532 tonnes of carrots and turnips, representing a 12.6% increase compared to the previous year. However, looking at the broader period from 2018 to 2021, production actually declined by 15.1%, which translates to an average annual decrease of 5.3%. The highest production level was recorded in 2019 at 43 607 tonnes, while the lowest was in 2020 at 30 676 tonnes. The most significant drop occurred in 2020, with a 29.7% decrease.

The peak value was observed in 2019 at 18 221 thousand US dollars, and the lowest in 2020 at 12 201 thousand US dollars. The sharpest decline happened in 2020, falling by 33.0%.
