This decline was partly driven by deteriorating land and water resources, which reduced domestic production efficiency. In 2021, the market recovered slightly to 9 453 tons, supported by the emergence of a new product segment – organic dried beans – as consumers showed growing interest in healthy food options. The following year, the market stabilized at around 9 359 tons, aided by the expansion of retail and online sales channels that improved product accessibility. However, by 2023, the market volume fell again to 7 793 tons, reflecting ongoing challenges in domestic production.

After two consecutive years of decline, Azerbaijan's dried shelled bean production rebounded in 2021. The country produced 6,631 tonnes that year, marking a 5.0% increase from 2020. Looking at the broader period from 2018 to 2021, overall production fell by 34.8%, with a compound annual growth rate of -13.3%. The lowest production level was recorded in 2020 at 6,313 tonnes, which also saw the steepest annual decline of 29.9%.
