From 2018 to 2019, aubergine production in Mexico showed a gradual increase, reaching 185.2 thousand tonnes in 2019. The market has been predominantly export-oriented, with almost all production destined for foreign markets and only around 5% retained for domestic consumption, supporting Mexico's position as the leading producer in the Americas.

After 2019, production volumes fell sharply, dropping to 112.2 thousand tonnes in 2020 and further to 90.5 thousand tonnes by 2023. Consequently, the domestic market size contracted dramatically from 130.1 thousand tonnes in 2019 to just 8.3 thousand tonnes in 2023. Throughout this period, exports remained robust, peaking at 89.8 thousand tonnes in 2021 and staying above 80 thousand tonnes annually, with Sinaloa, Sonora, and Nayarit as the key exporting states.

In 2024 and 2025, export performance continued to be strong, with volumes reaching 93.6 thousand tonnes and 87.7 thousand tonnes respectively, indicating sustained external demand. The wholesale price of aubergines in Mexico remained stable at approximately 0.53–0.59 USD per kilogram in 2025.
