From 2018 to 2020, the Mexican market for fresh cucumbers and gherkins was heavily export-oriented, with the United States absorbing over 72% of production. This reliance on a single foreign market kept domestic volume relatively stable at around 600 thousand tons, even as exports grew steadily.
A sharp shift occurred in 2021 when exports surged to 840 thousand tons, slashing the domestic market to 199 thousand tons. This export jump coincided with a historic 7.9% price increase for fresh cucumbers, driven by reduced supply due to unfavorable weather. Growers responded by investing more in protected agriculture like greenhouses, which had already boosted national production by 25.2% between 2015 and 2020, helping offset losses in open-field output.
In the 2022-2023 period, Mexico consolidated its position as the world's third-largest exporter of cucumbers and gherkins. The U.S. took 76.4% of the volume, with sustained demand for fresh vegetables and another 7.9% price rise for premium cucumbers further stimulating shipments, which reached 880 thousand tons by 2023. Consequently, the domestic market volume continued to contract, falling to 156 thousand tons as most production was directed overseas.
