Growth to 80.3 thousand tons in 2021 was supported by increased sweet potato production in the United States, Mexico's key regional supplier, which enhanced import availability and total market supply. The market dipped again in 2022 before another recovery in 2023.

Mexico's sweet potato production has increased for the second consecutive year. In 2021, the country produced 79 006 tonnes of sweet potatoes, marking a 4.8% rise compared to the previous year. Over the period from 2018 to 2021, production grew by 17.1%, with a compound annual growth rate of 5.4%. The lowest production level was recorded in 2019 at 59 358 tonnes, which also saw the largest decline of 12.0%. In contrast, the largest increase occurred in 2020, with production jumping by 27.0%.
