Market volume rose from 31.4 thousand tonnes to 35.2 thousand tonnes, while its value increased from $17.8 million to $20.7 million. Production recovered to 71.3 thousand tonnes in 2020 after a slight decline the previous year.

From 2021 onwards, the market's trade dynamics shifted notably. Export volumes grew substantially, reaching 46.2 thousand tonnes by 2024. The Ukraine war in 2022 disrupted global wheat supplies and increased price volatility, which elevated international demand for Austrian exports. This period also saw a shift in consumer preferences towards healthier and plant-based products, influencing domestic demand. These trends were supported by capacity investments from major players, such as Kelly's expansion of its production lines in Austria during 2022 and 2023.
