From 2018 to 2023, the Vietnamese market for vegetables, pulses and potatoes in vinegar experienced substantial growth, with volume expanding from 58.1 thousand tonnes to 94.1 thousand tonnes and value more than doubling from 72.0 million USD to 142.6 million USD. The most pronounced increase occurred in 2023, when market volume jumped by 28.9% and value surged by 53.3% compared to the previous year.

The market's expansion was supported by a steady rise in domestic production, which climbed from 82.8 thousand tonnes to 114.6 thousand tonnes over the same period. While export volumes fluctuated, imports remained a minor component of supply, indicating that growing domestic consumption was primarily met by local output.

Consumer preferences in the market have shown a trend toward naturally fermented vinegar over products made from industrial acetic acid, driven by health and quality considerations. Additionally, acetic acid is widely used in the food industry for preserving canned goods and vegetables, supporting its industrial demand.

In 2020, Vietnam produced 92,463 tonnes of vegetables, pulses, and potatoes in vinegar, showing little change from 2019. Over the period from 2017 to 2020, production grew by 4.4%, averaging an annual increase of 1.4%. The lowest production level was in 2018 at 82,828 tonnes, while the highest was in 2019 at 92,860 tonnes. The most significant decline occurred in 2018, dropping by 6.5%, whereas the largest increase was in 2019, rising by 12.1%.

Vietnam's production of vegetables, pulses, and potatoes in vinegar increased for the third year in a row. In 2020, the output was valued at 121.0 million US dollars, marking an 11.4% year-over-year rise. From 2017 to 2020, production grew by 19.8%, with a compound annual growth rate of 6.2%.

Following two years of growth, Vietnam's exports of vegetables, pulses, and potatoes in vinegar by volume declined. In 2020, exports totaled 22,426 tonnes, a sharp decrease of 17.4% compared to the previous year. The peak was in 2019 at 27,155 tonnes, and the largest increase was in 2018 at 9.6%.

From 2017 to 2020, the top destinations for Vietnam's exports of vegetables, pulses, and potatoes in vinegar by volume were Russia, accounting for 33.9% of exports, South Korea at 21.2%, and the United States at 17.2%. Together, these three countries made up 72.4% of total export flows.

In 2020, exports amounted to 29,345 thousand US dollars, down 7.6% from the previous year. Over the 2017-2020 period, exports increased by 12.7%, with a compound annual growth rate of 4.1%. The highest value was recorded in 2019 at 31,748 thousand US dollars, and the largest increase was in 2018 at 18.9%.

Between 2017 and 2020, Russia, South Korea, and the United States were the main buyers of Vietnam's vegetables, pulses, and potatoes in vinegar by value. The most significant decline occurred in 2018, falling by 31.5%, and the largest increase was in 2019, rising by 61.8%.

Over the 2017-2020 period, imports grew by 32.1%, with a compound annual growth rate of 9.7%. The lowest value was in 2018 at 549 thousand US dollars, with the largest decline that year at 15.3%, while the largest increase was in 2019 at 46.6%.
