From 2018 to 2019, the market volume for vegetables in vinegar increased from 149.9 thousand tons to 154.3 thousand tons, while production jumped from 30.0 thousand tons to 44.9 thousand tons. The COVID-19 pandemic in 2020 disrupted supply chains and trade, reducing the market to 139.3 thousand tons.

The market recovered to 151.9 thousand tons in 2021, but geopolitical tensions and Western sanctions in 2022 severely cut imports and led to a sharp market contraction to 92.6 thousand tons. Production also declined to 39.7 thousand tons as currency fluctuations and supply constraints affected the industry.

In 2023, the market volume stabilized at 93.9 thousand tons, but domestic production rose to 48.2 thousand tons. Industry sources reported a 37% growth in the vinegar-preserved vegetable segment, driven by leading producers such as Bondyuel-Kuban and Erkonproduct. For 2024, further production growth of 19% was indicated, supported by raw material availability despite rising retail prices for finished goods.

The partner structure for exports in kind from 2017 to 2020 was fragmented, with Ukraine accounting for 4.1% of exports, the United States for 2.2%, and Germany for 1.3%. Together, these three countries represented only 7.6% of total export flows, and no single country held a dominant share.

From 2017 to 2020, China, Germany, and India were the main sources for imports in kind of vegetables, pulses, and potatoes in vinegar to the CIS. China accounted for 26.8% of imports, Germany for 13.4%, and India for 11.4%. Together, these three countries represented 51.6% of total import flows.
