From 2018, the French turkey meat market faced persistent pressure from avian influenza, which began reducing turkey poult placements in key regions and raised animal feed costs due to geopolitical tensions. This led to a decline in market volume by 2019. However, in 2020, the COVID-19 pandemic sharply increased at-home meat purchases, temporarily boosting market volume despite ongoing production constraints from bird flu.

Severe avian influenza epidemics in 2021 and 2022 caused turkey consumption to fall by 7.8% and then 11.6%, driving market volume down further. High feed costs and general inflation pushed turkey prices upward, increasing the market's value in monetary terms even as physical volumes shrank. During this period, mandatory origin labeling for all meats, implemented in March 2022, altered sourcing practices. Imports, particularly from Poland, grew as domestic production struggled, changing the supply structure. By 2023, market volume showed a slight recovery while prices remained elevated, and factors pointed towards a stabilization of production and a recovery in sales within the catering sector.

However, over the entire 2017-2020 period, production fell by 14.4%, with a compound annual growth rate of -5.0%. The lowest production level was recorded in 2019 at 317.0 K t, while the sharpest drop occurred in 2018 with an 11.7% decrease.

In contrast, 2019 experienced the biggest increase at 15.1%.
