From 2018 to 2024, the Austrian market for salted, brined, dried or smoked pork contracted in physical volume, falling from 35.9 thousand tonnes to 30.6 thousand tonnes. This decline was primarily driven by a long-term reduction in per-capita pork consumption, which decreased from 52.8 kg in 2018 as Austrian eating habits gradually shifted away from pork.

Consumer preferences increasingly incorporated sustainability and animal welfare considerations, which regulated purchasing behavior and influenced market structure. A 2023 Greenpeace market check highlighted the scarce availability of pork from improved husbandry or organic production in supermarkets, reflecting a demand shift toward higher-quality segments that did not expand the overall market volume.

By 2024, domestic pork production showed a declining trend alongside stable export volumes. A slight increase in total meat consumption per capita, supported by rising tourism, did not benefit pork specifically, as consumers demonstrated a growing preference for poultry and products with animal welfare credentials, further contributing to the market's contraction.
