The European market for salted, brined, dried or smoked pork contracted steadily from 3 356 thousand tonnes in 2018 to 2 125 thousand tonnes in 2021. The initial decrease in 2018 was partly attributable to modifications in yield factors used to calculate meat ready for sale, which affected reported production and import volumes. During 2019 and 2020, processors increasingly adopted vacuum‑salting techniques and expanded the use of spice blends in brines, innovations that supported product quality and variety but did not reverse the overall volume decline.

Consumer behavior shifted after the COVID‑19 crisis, with price becoming a stronger purchase driver in 2021, further restraining market volume. A sharp rebound occurred in 2022, when the market grew to 2 931 thousand tonnes. This recovery was fueled by a global rise in pork production, led by China, which reduced export pressure on European suppliers and boosted domestic meat availability.

In 2023, the market volume fell again to 2 225 thousand tonnes, returning to a level close to that of 2021.

Salted, brined, dried, or smoked pork production in Europe has declined for the second year in a row. In 2020, output reached 2 582.7 thousand tonnes, representing a significant 17.6% drop compared to the previous year. Over the 2017-2020 period, production fell by 13.1%, with an average annual decline of 4.6%. The highest production level was recorded in 2018 at 3 351.3 thousand tonnes, which also saw the largest annual increase of 12.8%.

From 2017 to 2020, the United States (2.2% of exports in kind), Japan (0.8%), and Switzerland (0.6%) were the top destinations for Europe's salted, brined, dried, or smoked pork exports. Together, these three countries accounted for 3.6% of total export flows.
