From 2018 to 2020, Turkey's rye market volume remained relatively stable, starting at 320 thousand tons. Production was supported by state subsidies of around 50 TL per decare and trading through the Turkey Product Specialized Exchange. However, in 2020, the COVID-19 pandemic disrupted local market operations, including changes to market days and frequency in districts like Çavdarhisar, which contributed to a decline in the market volume to 295.7 thousand tons.

The market contracted sharply to 227.8 thousand tons in 2021. That same year, the state grain authority TMO set a guaranteed purchase price of 649 TL per ton for rye for the 2021-2023 production period. A strong recovery followed in 2022, with the market volume rising to 281.9 thousand tons, driven by increasing consumer demand for rye flour due to health and diet trends, as well as sustained use of rye for animal feed and industrial applications. Agricultural policy continued to encourage cultivation on poorer soils, leveraging the crop's resilience.

Growth continued into 2023, with the market volume reaching 305 thousand tons, reflecting a stable recovery trajectory after the earlier downturn.

Turkey's rye production declined for the second year in a row. In 2020, the country produced 295.7 thousand tonnes of rye, marking a 4.6% decrease compared to the previous year. Over the 2017-2020 period, production fell by 7.6%, with a compound annual growth rate of -2.6%. The largest increase occurred in 2018, but it was negligible at 0.0%.
