The market volume for prepared or preserved pork in Southern Europe declined from 57 thousand tons in 2018 to 51 thousand tons in 2019, then stabilized around 51 thousand tons in 2020. In value terms, the market dropped to 307 million US dollars in 2019 but recovered to 317 million US dollars in 2020. The COVID-19 pandemic in 2020 caused supply chain disruptions and higher production costs, leading to the reorganization of processing facilities and slower production, which kept volumes flat.

In 2021, the market grew to 53 thousand tons worth 334 million US dollars, supported by increased domestic production in some countries to lower retail prices and meet demand, alongside rising consumer interest in natural and preservative-free products. However, in 2022, market volume fell sharply to 46 thousand tons and value to 293 million US dollars, due to the persistence of African Swine Fever that reduced European pork output and a surge in feed, energy, and logistics costs. By 2023, the market rebounded to 50 thousand tons and 381 million US dollars, as reduced European pork exports to non-EU markets boosted domestic availability, and higher imports of fresh pork into Italy compensated for supply shortages.

From 2017 to 2020, France, Germany, and the United Kingdom were notable but not dominant buyers of prepared or preserved pork and offal from Southern Europe. After two years of decline, imports of prepared or preserved pork and offal into Southern Europe increased in 2020. Volume rose to 42 726 tonnes, up 3.6% from 41 237 tonnes in 2019. Over the 2017-2020 period, imports decreased by 10.8%, with an average annual decline of 3.7%. The largest drop occurred in 2018, with a 9.3% decrease.
