The market for prepared or preserved beef and offal in Belarus saw substantial growth in 2019, with volume reaching 77 863 t. This expansion was driven by the development of deep processing technologies at meat plants, which increased production efficiency, and a shift in consumer preferences toward healthier, leaner meat products with natural ingredients. State-owned agricultural and processing enterprises maintained their central role in supplying the market.

Market volume then contracted over the following two years, falling to 52 920 t in 2020 and to 48 707 t in 2021. During this period, consumer demand continued to evolve toward convenient semi-finished products and sausages, even as total consumption declined. Industry attention focused on long-term modernization, including discussions on automation, digitalization, and expanded cooperation with Russian retail networks.

A sustained recovery began in 2022, with market size rising to 54 646 t and further to 59 605 t in 2023. This rebound was supported by renewed consumer demand for ready-to-cook meat items and sausages, alongside ongoing modernization of production capacities by state-owned companies. The introduction of new labeling requirements for meat products in 2022 improved market transparency. By 2024, the sector processed over 600 000 t of cattle meat, with increased domestic supplies of sausages, canned meat, and dumplings, reflecting continued investment and export growth to markets such as Russia and China.

The highest value was recorded in 2019 at 349.0 million US dollars, accompanied by the largest annual increase of 23.9%.
