Despite the onset of the COVID-19 pandemic in 2020, the market adapted quickly through digitalization and a focus on convenient consumption, maintaining upward momentum.

Market volume declined to 186.1 thousand tons in 2022 as rising raw material costs, logistical disruptions from geopolitical factors, and the implementation of new technical standards for pastries increased production expenses. The introduction of mandatory labeling and stricter environmental packaging requirements also posed operational challenges. By 2023, volume recovered to 187.5 thousand tons, aided by technological investments, growing exports to Customs Union countries and China, and a shift in consumer preferences towards premium and nostalgic dessert options.

Belarus's pastry production volume increased for the second consecutive year. In 2020, the country produced 166.6 thousand tons of pastry, marking a 2.5% rise compared to the previous year. Over the period from 2017 to 2020, production grew by 6.4%, which translates to an average annual increase of 2.1%. The lowest production level was recorded in 2018 at 155.5 thousand tons, with the largest decline that year at 0.7%. In contrast, the most significant increase occurred in 2019, with a 4.5% growth.
