The COVID-19 pandemic in 2020 shifted demand patterns, boosting household consumption while reducing foodservice use, which supported overall market volume.

In the following years, the market continued to grow, albeit at a slower pace, reaching 6 357 t in 2021 and stabilizing around 6 397 t in 2022. During this period, local research and development focused on producing mushroom mycelium domestically to lower costs and improve quality. The entry of new specialized producers cultivating varieties like oyster, shiitake, and button mushrooms, along with the establishment of CHAMPIMA as the first Moroccan company dedicated to button mushroom production, strengthened local supply chains.

By 2023, the market volume rose significantly to 7 030 t. This increase was supported by sustainable development initiatives from the Crédit Agricole du Maroc Foundation, which included projects related to mushroom cultivation, fostering further investment and sector growth.

In 2020, the output was valued at 41 714 thousand US dollars, reflecting a 22.7% drop from the previous year. The peak value occurred in 2019 at 53 990 thousand US dollars, which also saw the largest annual increase of 55.7%.

From 2017 to 2020, France, Spain, and Canada consistently led as the top destinations for Morocco's prepared mushrooms and truffles exports in volume terms. France accounted for 41.8% of exports, Spain for 19.4%, and Canada for 10.7%, together making up 71.9% of total export flows.
