Market volume began recovering in 2021, reaching 20.2 thousand tons by 2023. The continued shift towards e-commerce, fueled by live-streaming and social commerce, allowed brands to engage consumers directly and stimulate renewed interest in pastry consumption.

Domestic production collapsed from 14.3 thousand tons to 1.4 thousand tons over the period, indicating a lasting change in supply structure. Concurrently, sustained consumer interest in sustainability and authentic digital communication influenced marketing approaches within the segment.
