The pastry market in Barbados showed strong growth in 2019, with volume increasing by 24% to 4.5 thousand tons. This expansion was followed by a sharp contraction in 2020, when market volume fell by 26% to 3.3 thousand tons, a decline that coincided with the global COVID-19 pandemic and its disruptive effects on supply and demand.

A recovery phase began in 2021, with market volume growing by 4% that year and accelerating to an 11% increase in 2022. By 2023, the market stabilized at 3.9 thousand tons, showing only minimal growth from the previous year. In value terms, the market followed a similar trajectory, reaching 16.2 million US dollars in 2023, supported by the overall volume recovery and possibly shifting price levels.
