The pastry market volume in Senegal declined from 19 844 tons in 2018 to 13 632 tons in 2020. This contraction was primarily driven by the sector's heavy dependence on wheat imports from Russia and Ukraine, which accounted for 65% of supplies, making the supply chain vulnerable. The agro-food group Patisen expanded its African operations, influencing the ingredient supply landscape.

After stabilizing at around 13 641 tons in 2021, the market expanded to 16 919 tons in 2022 and 17 560 tons in 2023. This recovery was supported by public policies like the Emerging Senegal Plan, which fostered investment in agri-food infrastructure. Simultaneously, the war in Ukraine continued to affect wheat prices, but it encouraged diversification using local ingredients such as millet and maize.
