The Ivorian pastry market opened the period with stable production volumes around 54 900 tons in 2018 and 2019. This stability was underpinned by a well-established bakery infrastructure, including over 2 000 bakeries across the country, and the formation of a national committee to oversee and modernize the wheat-flour-bread supply chain.

A significant expansion phase began in 2020, with production jumping to 66 194 tons and continuing to grow, peaking at 68 102 tons in 2022. This surge lifted the total market volume above 70 000 tons, marking a period of substantial market growth.

The growth trend reversed in 2023 as production fell to 60 204 tons. This decline was driven by a severe crisis in the domestic cocoa sector, where unfavorable weather conditions and the spread of the swollen shoot virus (CSSV) sharply reduced cocoa yields, impacting the availability of a key raw material for pastry manufacturing.
