Earlier Report Observations
Between 2018 and 2020, the pastry market in Morocco expanded from 10,284 t to 13,533 t, driven by government and private sector initiatives to modernize the industry. The signing of the 2018-2022 contract-programme with the National Federation of Bakeries and Pastries allocated state funds to upgrade facilities and combat informal activity, bringing previously unrecorded consumption into the formal market. Concurrently, the emergence of new local and franchised companies with modern equipment increased retail availability. In 2020, the launch of the Croc' brand, backed by a 100 million dirham investment in industrial bakery and pastry production, introduced online ordering and home delivery during the confinement period, further stimulating market access.
Market growth accelerated sharply in 2021, with volume surging by 63% to 22,035 t, and continued to rise by 22% in 2022 to reach 26,812 t. This rapid expansion was supported by ongoing sector modernization efforts, including professional training programs and business support under the RAWAJ plan. Despite mounting cost pressures from soaring raw material prices in 2022, which prompted calls for government support from bakers and pastry chefs, consumer demand remained robust, sustaining import growth and overall market volume.
In 2023, the market reached 29,306 t, a 9% increase, while domestic production jumped by 50% to 2,450 t. This production boost coincided with Morocco's victory at the Africa Pastry Cup in Marrakech, which elevated the prestige of Moroccan and African pastry arts. The international recognition and subsequent promotional effects likely stimulated higher demand for quality pastry products, supporting both market volume and a significant shift toward domestic manufacturing.
