Consumer interest in additive-free, gluten-free, and vegan options expanded, though from a small base. Household spending on pastry exceeded CZK 30 billion annually, with packaged pastry gaining significant share, reaching over a quarter of the market by 2020. These trends supported steady growth in imports and exports during the period.
The market volume for pastry reached 82.3 thousand tonnes in 2021, supported by stable demand and continued growth in expenditure on packaged products. In 2022, volume increased to 86.3 thousand tonnes as consumers returned to basic, fresh pastry and raised their purchase frequency amid the energy and raw material crisis, despite a nearly 50% price hike. However, by 2023, market volume fell to 78.0 thousand tonnes. This decline coincided with sustained cost pressure on bakeries, which optimized production and limited fresh pastry reloads due to high energy and labor expenses. Domestic production dropped sharply from 20.3 to 11.3 thousand tonnes between 2021 and 2023, while imports rose to fill the gap.
Import and export volumes show continued growth through 2025. Market dynamics remain influenced by consumer willingness to pay for quality, artisan, and healthier varieties, such as organic and spelt pastry, alongside persistent economic pressures on bakeries. Since late 2022, pastry prices have stagnated even as grain and energy costs fell, leaving bakers under margin pressure, yet interest in value-added and premium segments indicates a durable shift within the category.
