After a slight dip to 25 960 t in 2021, the market surged to 32 122 t in 2022. This rise was supported by tighter sanitary rules requiring producer code marking, which enhanced product traceability and confidence. Additionally, the egg products segment, including liquid eggs, reached 54% of the egg market by volume, driven by growing industrial use in bakery, confectionery, and ready meals.

Market volume eased to 29 535 t in 2023, even as industrial consumption of liquid eggs grew by 11.5% since 2020. In 2024, new European egg‑labeling regulations and updated Label rouge standards strengthened traceability and animal welfare criteria, affecting processing lines. Investments like Les Œufs Geslin's €3.5 million upgrade of liquid‑egg equipment demonstrated industry adaptation to these evolving requirements.
