A sharp recovery followed in 2021, with volume reaching 270 thousand tonnes, as the "Œufs de France" label covered nearly 70% of the retail market and growing demand for egg products broadened consumption.

Volume growth continued to 283 thousand tonnes in 2022 before stabilizing at 279 thousand tonnes in 2023. During this period, heightened focus on food storage practices—such as freezing shell-less eggs to reduce waste—helped sustain consumption levels, while the market value rose markedly from $774 million in 2021 to $1.26 billion in 2023.
