The goat meat market in Senegal contracted significantly between 2018 and 2020, with volume falling from 23 884 t to 18 157 t. This decline was primarily driven by a 14.1% reduction in the national goat herd due to unfavorable climatic conditions and forage shortages, which constrained the supply of meat.

Market volume began to recover in 2021, rising to 19 345 t, and then surged by 35% in 2022 to reach 26 122 t. This expansion occurred alongside continued government efforts to bolster livestock production, including a program funding 50% of the cost for importing dairy heifers to improve genetic stock.

In 2023, production eased slightly to 24 797 t, a 5% drop from the previous year's peak, marking a stabilization after the period of strong growth.

From 2017 to 2020, overall production fell by 12.3%, which translates to an average annual decline of 4.3%. The highest production level was recorded in 2018 at 23 884 tonnes, when output increased by 15.4%. However, the sharpest drop occurred in 2019, with production falling by 14.1%.
