Turkey's fresh garlic market volume rose from 25.5 thousand tons in 2018 to 47.1 thousand tons in 2020. During this phase, the market saw the arrival of green garlic, a sweet and mild variety obtained from thinned plantations, which enriched the product spectrum.

After a slight dip to 47.0 thousand tons in 2021, the market shrank to 42.7 thousand tons in 2022 before rebounding to 49.9 thousand tons in 2023. In 2024, consumer prices for fresh vegetables, including garlic, increased by 33%, while demand for organic garlic grew due to rising health consciousness. Production in 2024 was anticipated to reach about 59 thousand tons.

After two years of decline, garlic production in Turkey increased. In 2020, Turkey produced 28.6 K t of garlic, which represents a 22.3% increase compared to 2019. The minimum production level was recorded in 2019 at 23.4 K t, with the largest decline that year reaching 8.5%. Exports garlic to Turkey

Turkey's cross-border garlic shipments increased for the third consecutive year. In 2020, imports amounted to 21 142 t, showing a steep increase of 192.7% from the previous year. Over the period from 2017 to 2020, imports grew by 4355%, with a compound annual growth rate (CAGR) of 254.5%.

Throughout 2017–2020, China and Iran remained the key partner countries for Turkey's garlic imports in kind, together accounting for 82.5% of total import flows. Other partners made up the remaining share.
