The market for fresh or chilled goose meat in Germany contracted from over 23 thousand tons in 2018 to around 16 thousand tons in 2023. This sustained decline was largely attributed to a long-term fall in imports, which dropped by 50.6% over a decade by 2023, reflecting a pronounced decrease in consumer demand for goose meat.

Despite the overall market reduction, direct marketers increased their supply of fresh geese, and consumer prices remained stable at 18 to 21 euros per kilogram. Pressure from cheaper imported goods continued to shape the market, yet it did not trigger significant price cuts for domestically sold products.

In 2024, prices for traditional roast goose in several eastern states held steady at 19 to 21 euros per kilogram. A slight uptick in overall poultry consumption in Germany provided some offsetting support, although the goose meat sector continued to face headwinds from declining import volumes.

In 2020, Germany produced 4 500 tonnes of fresh or chilled goose meat, marking a sharp increase of 57.0% compared to 2019. Over the period from 2017 to 2020, production grew by 54.1%, which translates to an annualized growth rate of 15.5%. The lowest production level was recorded in 2019 at 2 866 tonnes, with the largest decline of 8.3% also occurring that year.

In 2020, the output of fresh or chilled goose meat in Germany was valued at 17 782 thousand US dollars, showing a significant rise of 32.0% from 2019. From 2017 to 2020, production value increased by 20.2%, corresponding to an annualized rate of 6.3%. The minimum value was 13 476 thousand US dollars in 2019, which also saw the largest decline of 13.8%.

Between 2017 and 2020, exports decreased by 81.7%, equating to an annualized decline of 43.2%. The peak was in 2018 at 1 606 tonnes, with the largest increase of 7.5% also recorded that year.

From 2017 to 2020, Austria, Czechia, and Poland were the main destinations for Germany's exports of fresh or chilled goose meat in volume terms. Austria accounted for 33.6% of exports, Czechia for 15.7%, and Poland for 13.5%, together making up 62.8% of total export flows.
