The German turkey meat market volume remained relatively stable between 2018 and 2020, fluctuating around 480 000 t. Production saw a gradual increase during this period, reaching 476 000 t in 2020.

Market volume contracted sharply to 430 000 t in 2021 and further to 391 700 t in 2022. This physical decline coincided with a strategic shift among poultry processors from frozen to chilled product offerings to achieve higher profit margins, which elevated average prices and supported a recovery in the market's total value to 1 392 mln USD in 2022.

Volume rebounded to 407 300 t in 2023. This recovery was supported by evolving consumer preferences for healthier and more sustainably produced meat, alongside the expansion of cold-chain logistics and online retail channels which improved access to chilled turkey. EU regulatory requirements for origin traceability also contributed to a more structured market environment.
