The domestic market for dried eggs in India grew strongly from 2018 to 2021, driven by government initiatives promoting protein consumption through mid-day meal programs and nutritional campaigns, which expanded demand into rural areas. Urbanization and the emergence of branded, hygienically packaged egg products further increased consumption, while the COVID-19 pandemic in 2020 acted as a catalyst, shifting consumer behavior toward protein-rich and conveniently packaged dried eggs via online platforms.

After a modest contraction in 2022, the market volume recovered in 2023, supported by the growth of the egg powder segment due to demand for long shelf-life products and India's position as a major exporter. Sustained domestic demand from rising health awareness and continuous private investment in large-scale layer units provided a stable foundation for production growth throughout the period.

India's dried eggs production grew for the third year in a row. In 2020, the country produced 24 310 tonnes, marking a moderate increase of 6.9% compared to 2019. Over the 2017-2020 period, production rose by 38.9%, with an average annual growth rate of 11.6%.

India's dried eggs production value increased for the third consecutive year. In 2020, output was valued at 119.8 million US dollars, up 9.1% from 2019. From 2017 to 2020, production value grew by 45.2%, with a compound annual growth rate of 13.2%.

After two years of growth, dried eggs exports from India fell. In 2020, exports totaled 5 601 tonnes, a decline of 25.6% from 2019. Between 2017 and 2020, exports decreased by 17.4%, equivalent to an annualized rate of 6.2%. The peak was in 2019 at 7 531 tonnes, while the largest increase occurred in 2018 at 7.3%.

From 2017 to 2020, India exported dried eggs to a wide range of markets. Russia (17.6% of exports by volume), Indonesia (16.6%), and Vietnam (13.4%) together accounted for 47.6% of total exports, with the remaining 52.4% distributed among many smaller destinations.

India's dried eggs export value declined for the second consecutive year. In 2020, exports amounted to 27 604 thousand US dollars, a drop of 24.1% year-over-year. From 2017 to 2020, export value fell by 13.6%, with an annualized rate of 4.8%. The highest value was recorded in 2018 at 38 399 thousand US dollars, which also saw the largest increase of 20.1%.

The value structure of exports from 2017 to 2020 indicates a diversified partner base. Indonesia (17.8% of export value), Vietnam (14.4%), and Russia (14.0%) collectively made up 46.2% of total flows, while the remaining 53.8% was spread across numerous smaller markets.
